I've been a chef for years and thought I knew everything about food but I had a colon cancer scare and knew I needed to get back to basics. Over the years, I'd spent way to much time eating and sleeping and stressed out but I feel like I got a second chance so I've cut way down on my meat and I'm eating more fiber. I am now switching up the menu at my restaurant so I'm paying it forward.
